Introduction
This is a variant on the Pork Chop and Rice Bake from the Absolute Beginner's Cookbook This is a variant on the Pork Chop and Rice Bake from the Absolute Beginner's CookbookNumber of Servings: 4
Ingredients
-
16 oz Great Value Walmart boneless ,skinless chicken breast cut up
1 can (10.75 oz) Cream of Chicken Soup
10 fl oz Milk, 2%, with added nonfat milk solids, without added vit A
2 cup Rice - Minute instant brown rice
Tips
It's easiest to use the precut chicken tenders.
When making the soup/rice mixture, it's smoother if you use a wire whisk to mix the soup and milk and then stir in the rice.
Directions
Preheat oven to 350 F.
Cut the chicken breasts into tenders (or use precut tenders)
Brown the chicken in a skillet on the stove top
While the chicken is browning, mix together soup, milk, and rice (I usually use a wire whisk to mix the milk and soup and then add the rice).
Spray a 1-1/2 quart casserole dish with nonstick spray.
Put the chicken in the casserole and pour the soup/rice mixture over it.
Cover and bake for 1 hour at 350 F.
Uncover and cook another 5-6 minutes until the top crisps up.
