Ingredients
-
1-1/2 cups sugar
3/4 cup clear jell or cornstarch
1/2 pkg. orange jello
3 cups water
1/2 tsp. salt
1-1/2 T. lemon juice
1/4 tsp. cinnamon
1/8 tsp. finely ground black pepper
1 quart fresh sliced peaches
2 baked pie crusts
1-1/2 cups heavy whipping cream
1 tsp. vanilla
2 T. sugar
a pinch of salt
Directions
In a saucepan combine sugar, clear jell, orange jello and water. Cook over medium heat unil thick. Continue to cook and stir for an additional 2 minutes. This keeps it from thining later. Remove from heat and add salt, lemon juice, cinnamon and pepper. Cool. Add peaches. Pour into pie crusts and chill until serving time. A little before serving Place cream, vanilla, 2 T. sugar and salt into a 3-qt. bowl and place in the freezer along with the beaters. Leave in the freezer for a few minutes until the cream starts to freeze along the edges. Take out of freezer and beat cold cream mixture with cold beaters until cream mounds softly. Be careful not to beat too long, you don't want sweet butter. It is best to slow beaters down as you get closer to desired consistency. Divide whipped cream over pies. Cut each into 8 pieces and serve immediately. Yield: enough filling for 2-9" pies.
