Ingredients

    16 oz Organic Valley Ground Chicken, Frozen
    1 serving Dole Pineapple Slices in 100% pineapple juice (2 slices)
    .5 serving Bob's Red Mill Almond Flour - per 1/4 Cup
    6 tsp coconut aminos (by SPARKPLUGG)
    .5 tbsp Coconut Oil
    2 serving Green Onion (fresh-1 stalk)

Tips

See the instructions. I serve with just a bit of Whole 30-compliant mayo and some dijon mustard, sliced onions on a bed of lettuce. My husband eats his on an English Muffin with just mayo.


Directions

Finely chop pineapple slices and green onions, then mix all ingredients together in a bowl. Form 4 patties onto a parchment paper-lined cookie sheet, refrigerate for an hour, fry in a skillet, turning once, until 165 degrees. If necessary, microwave to get up to temp. Chicken microwaves very well and it will not dry out these patties.
