1 15 oz. can black beans with liquid
1 15 oz. can white beans with liquid
1 10 oz. can diced tomatoes with green chilies with liquid
1 4 oz. can sliced mushrooms, drained
½ medium onions, diced
2 large carrots, chopped
2 stalks celery, diced
1 clove garlic, minced
½ green bell pepper, chopped
½ red bell pepper, chopped
½ tsp. salt
½ tsp. pepper
1 tsp. cumin
Step 2:
2 lbs. chicken drumsticks, skin removed (~6 drumsticks)
1 Tbsp. Adobo seasoning
Thyme
Parsley
Tarragon
Tips
To lower the sodium content, use low sodium beans and tomatoes and/or decrease the Adobo seasoning.
Directions
Step 1:
Combine all ingredients in slow cooker, except for the chicken and flake spices. Add seasonings to taste and mix well.
Step 2:
Place skinless drumsticks on top of the bean mixture and season with Adobo seasoning first, then liberally season with thyme, parsley, and tarragon (or whatever other seasonings you prefer).
Cook the beans and chicken on high for 3-1/2 to 4 hours or until the chicken is done to your liking.
Serving Size: One chicken leg and 1 cup of the bean mixture.
