Ingredients

    0.50 tbsp Sour Cream
    1.50 tsp or 1 packet Yellow Mustard
    1.50 tbsp Celery, raw
    3 tbsp Hellmann's Mayonaise
    3 tbsp Dill Relish, Heinz
    2 serving Egg Hard Boiled (1 serving = 1 large egg boiled)
    5 oz Yellow Mini Potatoes
    1 oz Onions, raw
    10 Manzanilla Green Olives (Pimiento Stuffed )

Tips

Drain the relish or the salad will be too wet. Use more or less mayo. Use real mayo with a zero carb count per tablespoon, not Miracle Whip. Cook the potatoes and eggs the night before if possible. You can make the salad the night before but make sure the potatoes and eggs are cold before mixing.


Directions

Scrub and boil potatoes in salted water until tender. Hard cook eggs and refrigerate several hours or overnight. When ready, dice the potatoes and finely chop the eggs, celery and onion. Slice the olives. Mix together and use a potato masher to get the desired consistency. Add mayo, start with 2 Tbs and add more if needed. Add mustard and sour cream. Add salt and pepper to taste.

This makes 2 good size servings. I was trying to keep the carb count low thus the small amount of potatoes.
