Ingredients

    10 oz package Cherry Tomatoes
    2 Tomatoes, Roma
    3 oz Baby Carrots 8-11
    1/2 large Red Onion Diced
    1 tbsp Smart Balance Omega Light
    2 tsp Chicken Bouillon
    2 cup Water
    1Cup Cottage Cheese 2%
    1clove Garlic
    2 tsp Splenda/Swerve

Directions

Saute Veg together till tender. Add water & Bouillon. Bring to boil - Turn down heat to med/low Simmer for 20 mins. Add Cottage cheese. Puree till smooth. Add sugar to taste. Top with parm, romano or nutritional yeast &/or fresh basil chiffonade.
