Ingredients

2 cups chicken stock (I like Kitchen Basics)
1 cup whole milk
1 cup dried orzo pasta
1 cup broccoli florets (with some stem)
1/2 cup grated Parmesan cheese
Tips
Fresh spinach, roughly chopped, can be substituted for the broccoli but add it with the cheese and stir until cheese is melted and spinach is wilted.
Directions
Cut fresh broccoli into very small florets and slice the stems.
Bring the stock and milk to a boil in a large saucepan. Add orzo and cook 8 minutes. Add broccoli and continue to cook about another 4 to 5 minutes. Turn heat to low and had Parmesan cheese and mix until cheese is melted and broccoli is tender but still has a bite and pasta is al dente.
Serving Size: Makes 6 servings, about 2/3 cup each
