Ingredients

    1 large cucumber peeled and sliced thin
    1/4 cup thin sliced onion
    2 Tbsp light mayo
    1 Tbsp. vinegar
    1 Tbsp. sugar
    salt & pepper to taste

Directions

Peel and slice cucumber in even slices
slice onion
in a bowl mix mayo, vinegar, sugar, salt & pepper.
add cucumbers & onions and mix till coated.
You can also add tomatoes to this.
makes 4-5 servings

    Very Good
    This is one of my hubby's favorites. We omit the onions and use tomatoes as he is allergic to onion. He really likes Miracle Whip and not mayo, so we used that, too. Very tasty indeed. He said he likes it better than with the sour cream. - 4/5/13

    This is similar to a family recipe of mine. Instead of mayo we use sour cream. A summertime favorite. Even better with pickling cucumbers. - 9/8/09
