Ingredients:
1 Chicken Breast Skinless & Boneless in 1 inch cubes
1 Tbsp Lime Juice
1 Tbsp Garlic Paste
1 Tsp Honey
1 Tsp Peanut Butter, smooth style
Directions
Makes 2 servings i normally just serve with a salad to keep it low fat.
First Cube the chicken into 1 inch pieces
Mix all the other ingredients into a smooth sauce then place them in a tupperware container with a lid (so the garlic doesn't cling to everything in your fridge) Add the chicken, mix so all pieces are covered then place the lid on adn refridgerate for aslong as you want i normally prep mine the day before but 1 hour is enough too so that part's up to you really.
Then when you are ready to eat just thread onto skewers about 4/5 pieces each put under a grill on high for 5 - 10 minutes turning once, keep an eye on it as the honey may begin to 'caramelise' if you aren't careful
Serve with salad and that's it simple and delicious, also you can add a little oil if you want but it is unnecessary calories.
