    1lb of salmon
    10 mushrooms cleaned and halved

    Orzo pasta 1 box
    1 can of artichoke hearts or bottoms

    1 cup olive oil
    .25 cup of pine nuts or pistachios
    1 big bunch of fresh basil leaves


Sprinkle fish with a little salt and pepper and place on roasting dish.
Surround with the mushrooms.
Bake at 375 for 25 or so minutes til flakey

Prepare orzo according to the box

in blender make dressing. Blend well.

Rinse and drain orzo.
Pour in half the dressing.
Flake up the salmon and add.
Add mushrooms and artichoke (cut up)
Pour remaining dressing.

Makes 8-10 servings
Can be served as a fish dinner or fish starter.
Can be served warm or chilled.
Great way to use left over salmon.
