Introduction

I make this tasty, warm, and sweet-tooth satisfying snack using a whole wheat tortilla; however, PBB "purists" might opt to take a bit more "traditional" sandwich approach to the recipe and use a white flour tortilla instead. Whatever combination of taste and appearance works for you!

Ingredients

    One low-carb/low-cal tortilla, such as La Tortilla Factory Whole Wheat Low Carb Tortilla (used in nutrition calculation)

    1 tbsp peanut butter, smooth

    1/2 one medium banana, sliced

    2 servings (10 sprays, one for each side of the tortilla) I Can't Believe it's not Butter Original Buttery Spray

    2 tsp Sugar Twin Granulated Brown Sugar Substitute

    Two toothpicks

Directions

1. Coat one side of the tortilla with the buttery spray and sprinkle with 1 tsp of the Sugar Twin Brown Sugar substitute, pressing lightly with the back of a spoon to maximize adhesion of granules.

2. In a skillet over low-medium heat, place the tortilla "buttered/sugared" side down. As the tortilla warms, coat its upright side with 5 sprays of buttery spray and sprinkle with 1 tsp brown sugar substitute, pressing lightly with the back of a spoon.

3. After first side of tortilla has warmed for about one minute (it should NOT become crunchy; it should only soften slightly) flip the tortilla and warm the opposite side for one minute.

4. Remove tortilla from skillet and spread open face with peanut butter, arrange sliced bananas on top of peanut butter evenly, and spinkle with additional brown sugar substitute, if desired.

5. Loosly (but tightly enough to contain filling) roll tortilla so that a "pinwheel" effect occurs with the PBB filling. Secure the rolled tortilla one-quarter of the length toward the center of the "log" on both ends.

6. Return pinwheel to skillet, allowing to warm without leakage of filling.

7. Remove from heat, slice pinwheel PBB tortilla log in half, serve, and smile!

Makes two 1/2 log servings. Tastes great with a glass of soy milk and a handful of raisins (not included in nutrition calculation)!
