Ingredients

8 egg whites
1 cup egg substitute
1/4 cup nonfat milk
1 cup shredded swiss cheese
2 tbsp chicken (or vegetable) broth
1 medium sized onion
1 and a half cups shiitake mushrooms
1 tsp black pepper
1 tbsp italian seasoning (or other your preference, to taste)
Directions
Preheat oven to 400 degrees. Chop onions and mushrooms. Spray oven-safe skillet with cooking spray. Add broth to skillet and heat over medium heat, add onion, cook about 2 minutes, until soft. Add mushrooms to skillet, cover and cook about 3 minutes.
Put the mushrooms and onions into a bowl for the time being. Combine egg sub., egg whites, milk, and 3/4 cup of cheese in separate bowl. Wisk until frothy.
Spray skillet again with cooking spray and prehat over high heat. Pour egg/cheese/milk mix into hot skillet. Cook about 2 minutes until mix begins to set on bottom. Sprinkle mushrooms/onions on top, cover and reduce heat to medium low. Cook 6-10 minutes, or until mostly set, edges will be lightly browned. Sprinkle with remaining cheese and place in oven for about 5 minutes, until top is lightly browned.
