Scallops, Lobster Meat, Artichoke Hearts and Red Roasted Peppers in a Lemon Sauce over Whole Wheat Pasta

Ingredients

    1 dozen Sea Scallops
    1 tablespoon Margarine
    Salt to taste
    Pepper to taste
    Garlic Powder to taste
    Oregano to taste
    2 Lemons, sliced in halves longways
    1-8oz. pkg immitation Lobster Meat, into chunks
    1-14oz. can Quartered Artichoke Hearts
    1-8oz jar Red Roasted Peppers (not in oil!), diced
    1 box whole wheat pasta of you choice (Linguini reccomended)

Directions

1.) Bring a large pot of water to a boil and cook you choice of pasta as per box directions.
2.) In a large pan, melt the margarine. Increase flame/ heat, then add Sea Scallops.
3.) Squeeze lemon halves over the scallops and place remains into pan with the scallops. Add Salt, Pepper, Garlic Powder and Oregano to your desired amount. Let sit for about five minutes.
4.) Flip Scallops and season again with salt, pepper, garlic powder and oregano. Let sit for 5 mins.
5.) Add chunks of lobster meat, artichoke hearts and red roasted peppers. Cover and let simmer for 5-10 mins, depending on the size of the scallops.
6.) Remove Lemon halves and stir. Place over whole wheat pasta and Enjoy!!

    Very Good
    I used this as a base but used imitation crab instead of lobster. I also added mushrooms, green peppers and onions. I will make it again. - 11/14/09
