You can substitute the original Bisquick with a low calorie/low fat version, use low fat cheddar to decrease the calories even more & add your own veggies, spices, etc, but this yummy recipe is low on calories without scrimping on flavor!! Ingredients

4 cups grated zucchini
1 cup Original Bisquick Pancake & Baking Mix
1/3 cup vegetable oil
1/2 cup grated cheddar cheese
1/2 tsp garlic powder
1 Tbsp parsley flakes
4 large eggs, beaten
Directions
Mix all ingredients together. Make sure you mix everything together well. Put in an 10 x 13 or 9 x 12 casserole dish & bake at 350 degrees for approximately 50 minutes. Casserole will be golden brown and bubbly when ready.
Divide into 12 even servings & enjoy!!
