Ingredients

2 lbs Fresh Spinach, washed & well drained
2 tbs olive oil
3 cloves crushed garlic
1/2 cup grated parmesan cheese
Salt & pepper to taste
Directions
1. Crush the garlic into the olive oil, stir and set aside.
2. Wash the spinach and drain well, pat dry or use a salad spinner to remove the excess water.
3. Steam spinach until slightly wilted, shouldn't be more than 2 or 3 minutes- watch closely!!
4. Drain off excess water from spinach and place in a bowl. Stir in olive oil and garlic first and then the parmesan. Salt and pepper to taste (fresh pepper tastes better).
This makes 4 good size servings and is even better the next day!
