Introduction

This is actually a couple recipes I found here that I combined and did a few things differently. I make a batch and then I will individually freeze the roll-up and then I have individual servings that I can eat. I also took some of the leftover wine that I had and added it to the water of the lasagna noodles. It is then called drunken pasta and just adds a little flavor to the noodles. Making it with ground turkey would be even better nutritionally or you could leave out the meat all together. Ingredients

    Cottage Cheese, 2% Milkfat, 2 cup (not packed)
    Mozzarella Cheese, part skim milk, 8 oz
    Parmesan Cheese, grated, 1.50 cup
    Egg, fresh, 2 large
    Oregano, ground, 1 tsp
    Basil, 0.25 tbsp
    Garlic, 3 tsp
    Canned Tomatoes, 2 can
    Spinach, frozen, 2 package (10 oz) yields
    Tomato Paste, 1 can 6 oz
    Ground beef, extra lean, 16 oz
    Rose Wine, 1.50 fl oz
    Pasta, Lasagna Noodles, 16 oz
    Mushrooms, fresh, 1.5 cup, pieces or slices
    Artichokes, frozen, 1 package (9 oz)

Directions

1. Puree diced tomatoes. In saucepan, add tomato paste, 9 oz water, 3 T wine, 1t italian seasoning, 1t basil, 1 t oregano, 3 t minced garlic bring to boil and simmer for 45-60 minutes. Brown 1 lb ground beef. Add to sauce after 30 minutes.
2. combine 2 packages frozen spinach,1.5 cups mushrooms, artichokes, 2 cups mozarella cheese, 24 oz cottage cheese, 1 cup parmesan cheese, and 2 eggs.
3. Cook lasagna noodles.
4. spread spinach mixture approximately 1/3 cupful over noodles. Roll up and secure with a toothpick.
Place in baking dish coated with cooking spray. Pour tomato sauce over over roll-ups and refrigerate for one hour. Cover and bake at 350 for 35-40 minutes. Sprinkle with 1/2 cup of parmesan cheese. Discard toothpicks. Makes 20 servings.
