Introduction

Ingredients

    4 small zucchini, unpeeled, and grated
    3/4s cup panko (Japanese breadcrumbs)
    1/2 cup parmesan cheese
    1 egg, lightly beaten
    1/4 small onion, grated

    Assorted spices
    I used garlic powder, cumin, coriander, and some fresh basil...


Directions

Mix all ingredients together,

Spray small loaf pan with olive oil spray...

Put all ingredients into small loaf pan.

Bake at 400 degrees for about 30 minutes.

Remove from oven, and let cool slightly.

Slice and serve
