Number of Servings: 16

Ingredients

3/4 cup Gold Medal All Purpose Flour
    1/2 cup unsweetened Hershey's cocoa
    1/4 teaspoon salt
    1/3 teaspoon baking powder
4 tablespoons Gerber sweet potatoes puree
    16 packets Splenda
    4 egg whites
    1 teaspoon vanilla extract
    2 tablespoons brewed strong coffee
1/2 cup Fage non-fat Greek yoghurt
1/4 cup semi sweet chocolate chips

Tips

(a) These come out more fudgey than "brownie-y" but are delicious none the less. Really satisfies any chocolate craving.

(b) I used an 12 by 9 pan (the size of my toaster oven), but I would recommend any small sized pan.

Directions

Preheat oven to 350

1. Whisk together cocoa, flour, salt, and baking powder in medium bowl then set aside

2. With an electric mixer, mix puree and Splenda at medium speed for 2 to 3 minutes. Add egg whites, vanilla, and coffee

3. Scrape excess on sides and reduce mixer speed. Slowly add flour mixture followed by yoghurt, mixing gently until combined

4. Stir in chocolate chips

5. With spatula spread even on a foiled-lined and greased (use cooking spray) pan and back for 15 to 20 minutes.

6. Cut into 16 squares

I made them without the coffee and they're still AMAZING :) Seriously unbeatable calorie-wise, and the dark-chocolate taste is absolutely delicious. Mmm. Will definitely be making them again, and this time I'll include the coffee as well! ;) - 12/29/11

2 tablespoons of strong brewed coffee! :)

Sorry about that, I wrote this up years ago and never re-read it.

So sorry for such a delayed response! I used a 9 by 12 but I would recommend something smaller.
