Introduction

This salad is asian inspired. It combines the freshness of salad and the rich, peanutty flavor of satay. The dressing can be altered to suit your taste. Sometimes I will add some marinated firm tofu to the top to mimic chicken satay. This salad is asian inspired. It combines the freshness of salad and the rich, peanutty flavor of satay. Number of Servings: 4

Ingredients

    Dressing:
    Cider or rice vinegar
    Soy sauce
    Peanut Butter
    Granulated Sugar
    Romaine Lettuce
    Cucumbers
    Mandarin oranges (canned)
    Slivered almonds

Directions

With a whisk, mix soy sauce, peanut butter, sugar and vinegar in a medium bowl. Amounts can be altered to taste. Teriyaki Sauce can also add a sweetness to the dressing.
Chop lettuce and place in salad bowl. Slice cucumbers on the bias and add to bowl. Put mandarin segments on top of cucumbers and sprinkle with almonds.
Drizzle the dressing on top and enjoy.
Makes 4 servings.
** To turn into a meal, add asian marinated tofu or chicken breast.
