Ingredients

    For the Cheesecake:
    3 Eggs plus 1 Egg White
    pinch of salt
    1 container (12 ounces) Nonfat Cottage Cheese
    5 tablespoons Skim Milk
    2 tablespoons lemon juice
    2 teaspoons vanilla extract
    5 tablespoons granulated sugar

    For the Topping:
    2 peaches, peeled and thinly sliced
    3/4 cup unsweetened apple juice or white grape juice
    1 1/2 teaspoons cornstarch
    2 tablespoons sugar or equivalent sugar substitute ( Splenda was used in calculations)

Directions

Preheat oven to 350-degrees F. Seperate the egg yolks into your blender and the egg whites, along with the extra white, into a nonplastic mixing bowl. Add a pinch of salt to the whites and beat until stiff peaks form. Set aside. Put the remaining cake ingredients into the blender with the yolks and blend until smooth and creamy, then pour into the egg whites. Gently but thoroughly fold together, with and up-and-down circular motion. Don't mix the air out of the egg whites. Spoon into a 9-inch round or square cake pan. Bake for 40-50 minutes, until a knife inserted in the center comes out clean. Cool, in the pan, before adding the topping. When the cake has thoroughly cooled, arrange the peaches on top in overlapping rows. Combine remaining ingredients in a saucepan; cook, stirring, until thickened. Pour over the peaches and chill. Makes Eight Servings.
