Ingredients

    1 large sweet green pepper
    1 large sweet red pepper
    1/5 Vedalia onion
    1 can sweet kernel corn (15.5 oz)
    1 can chick peas (15.5 oz)
    1 can dark or light red kidney beans
    1 tbls olive oil
    1&1/2 tbls Balsamic vinegar
    Salt and pepper to taste

Directions

In a collander drain and rinse corn, chick peas, and kidney beans. Chop onion and peppers (small - like 1/2 inch in size). Combine all ingredients into a large bowl and toss with olive oil, Balsamic vinegar, salt, and pepper.
Serve 6

    What a beautiful and delish side dish. I used mini sweet peppers (about 16) and seasoned it with Pappys Seasoning instead of salt. - 5/31/20
