Number of Servings: 4

Ingredients

    1/2 lb Haddock
    1 Bell Pepper
    1 Medium Onion
    1 Sweet Potato
    1 Boullion Cube
    4 C Water
    2/3 C Skim Milk
    Salt, Pepper, Spices to taste

Directions

Dice peppers coarsly and cut the onions into strips. "Fry" both together without oil in a frying pan. While the onions and peppers are cooking, set 4 cups of water to boil. When it reaches a boil, add the boullion cube and allow to simmer. When the onions and peppers are tender but not soft, add to the broth. Add the milk.

Use a fork to poke the sweet potato all over. Wrap it in a paper towel and cook in the microwave approx. 4-5 minutes, or until tender. Cut into wedges.

Cook the haddock either in the microwave or in the pan. When fully cooked, cut into bite-sized pieces. Add the haddock and sweet potato to the soup. Season to taste (can include fresh spices) and serve hot.
