Ingredients

    8 oz cooked boneless skinless chicken breast, cut into bite sized pieces
    8 oz (dry) pasta, cooked al dente
    3/4 cup onions, chopped
    3/4 cup peppers, chopped
    3/4 cup mushrooms, sliced
    1 large scallion or 2 cloves garlic, minced
    1 large tomato, chopped
    1 cup fat free cottage cheese
    1/2 cup fat free sour cream
    1 cup fat free milk
    1/2 cup salsa
    1 TBS capers
    1TBS olives, sliced
    5-6 basil leaves, minced
    about 2 tsp coarse black pepper
    1 cup shredded fat free mozzarella cheese

Directions

Combine all ingredients except mozzarella in a large bowl and toss to mix thoroughly. Spray a large, lidded casserole dish with cooking spray and add pasta mixture. Bake, covered, in 375 degree oven for about 40 minutes until thoroughly heated and bubbly. Sprinkle mozzarella over the top of the casserole and return to oven, uncovered, for an additional 5-10 minutes or until cheese has melted.

You can vary this dish with different meats and veggies. It can also be served cold as a pasta salad or as a soup by adding water or stock.
