Introduction

Ingredients

* Okra, 1 pound
* Red Ripe Tomatoes, 4 large whole (3" dia)
* *Goya, White beans, 1 can
* Garlic, 5 cloves
* Salt, 1/4 teaspoon plus a dash for rice
* Olive Oil, 1 tablespoon
* 1/4 teaspoon curry powder if desired for rice
* Brown Rice, long grain, 1 cup
Directions
Set up rice to cook while preparing Beans and Okra
Wash rice and soak while washing tomatoes and okra.
Put rice in rice cooker with twice as much fluid if using brown rice. Add 1/2 curry powder if desired and a dash of salt. Set to cook.
Peel and chop garlic
Saute Garlic and Okra for a few minutes in olive oil in bottom of cooking pot until garlic is slightly browned.
Put tomatoes in a blender and grind up.
Pour tomatoe puree into pot and add salt and beans.
Cook at a low boil until reduced by 30 percent.
Serve over rice... YUM!
