Ingredients

Trader Joes Marinara Sauce, 10 cup (remove)
Trader Joes Lasagna Noodles no bake, 16 oz (remove)
Canned Tomatoes, 2 cup (remove)
Onions, raw, 1 cup, chopped (remove)
Green Peppers (bell peppers), 0.5 cup, chopped (remove)
Mushrooms, fresh, .5 cup, pieces or slices (remove)
Spinach, fresh, 2 cup (remove)
Cottage Cheese, Nonfat, 16 oz (remove)
Mozzarella Cheese, part skim milk, 8 oz (remove)
Cheddar Cheese, .5 cup, shredded (remove)
Parmesan Cheese, shredded, 4 tbsp (remove)
Basil, 2 tbsp (remove)
Parsley, dried, 1 tbsp (remove)
Cilantro, raw, 1 tbsp (remove)
Garlic, 2 clove (remove)
Directions
Chop onions, mushrooms and peppers and mix with 1 can chopped tomatoes and marinara sauce. Add about 1/2 of the herbs and spices.
In a separate bowl mix cottage cheese the rest of the herbs and spices and the parmesan cheese.
Chop spinach.
Spray lasagne pan with non-stick spray and put about 1/2 cup sauce in the bottom of the pan. Cover with one layer of pasta then layer one layer of sauce and 1/4 of the shredded cheese. Make another layer of pasta and top with chopped spinach, sauce and cheese. The third layer add the cottage cheese mixture and top with cheese. Add another layer of pasta and top with remaining sauce and cheese. Cover with foil and bake at 375 for about 60 min.
