Introduction

Fajita style veggies and chicken, Indian spices. Turned out quite tasty - but be careful of the heat. Curry and cayenne can both be pretty spicy, and if your poblano is also (mine wasn't...) Ingredients

    1 large chicken breast, sliced fajita style
    1 medium onion, sliced fajita style
    1 poblano chili, sliced fajita style
    1 clove garlic, crushed or minced
    1 large carrot, shredded
    1/4 cup shredded coconut - sweetened or not
    1 - 1 1/2 tsp curry powder
    1/2 - 1 tsp garam masala (opt)
    1/4 tsp kosher salt or less
    dash cayenne pepper (opt)
    2 whole wheat tortillas, warmed
    2 Tbsp fat free sour cream (opt)

Directions

Heat the oil in a skillet, medium hot. Add chicken and all the veggies. Stir fry for about 8 minutes. Reduce heat. Add the spices, stir in well. Cook for about another 2 minutes. Pile half the mixture into each of 2 warmed whole wheat tortillas. Top with 1 Tbsp fat free sour cream if desired. Makes 2 generous servings.
