Introduction

This is a fantastic, healthy, and hearty salad -- especially during the summer months, as it can be served warm, room temperature, or cold. This is a fantastic, healthy, and hearty salad -- especially during the summer months, as it can be served warm, room temperature, or cold.

Ingredients

    3 medium sweet potatoes
    1 medium red onion (or half large red onion), chopped
    3 T. olive oil
    3 T. brown mustard
    1/3 c. balsamic vinegar
    2 fully cooked chicken andouille sausage links (2.4 oz. each), cubed
    1/2 cup chopped parsley
    Salt and pepper to taste

Directions

Boil sweet potatoes until firm, but fork tender (do not overcook, or the salad will be a pile of mush), cool, then chop into 1/2 inch cubes. (You could try chopping them first so they cook faster, but I have not tested this method for this recipe.) Add all remaining ingredients except parsley and toss. Add chopped parsley to top and serve. A pinch of sugar (or sugar substitute like Splenda) is optional, to bring out the sweetness -- but is not calculated in the nutritional totals.

    I also roasted the diced potatoes (for about 15 minutes @ 400 degrees). Took the dish to a big family gathering & everyone raved about it. - 7/17/10

    This is so yummy - I roasted the potatoes instead of boiling them and it was fantastic. My husband loved it too. - 7/20/09

    Oh I'm so glad someone else tried this recipe! :) I got it from my neighbor, Eugenia, who got the idea years ago from one of her cooking magazines. I also posted a white bean salad recipe that was also inspired by Eugenia, as well as some other recipes if you want to check them out. :)
