Ingredients

1 medium to large onion, diced
minced garlic, to taste
olive oil
1 can corn
1 can tomatoes
1 can black beans
1-2 cans broth (veggie or meat)
chili powder and cumin to taste
Tortilla chips
lime wedge for juice
cheeder cheese
Optional: avocado, sour cream, chicken
Directions
In large pot:
-Sautee in olive oil 1 medium to large onion, diced, and minced garlic to taste
-Add to the pot, with can-juices:
1 can corn
1 can diced tomatos
1 can black beans
1-2 cans low fat, low sodium broth
cumin and chili powder to taste.
-Boil for 5-10 minutes. Serve hot over corn chips, or toasted tortillas, with lime juice and cheese.
-May also serve with: chicken, avocado, sour cream, etc.
-You can make this meal healthier by using low fat/low sodium products and toasting tortillas for chips.
