Ingredients

1 lbs Flank Steak, tenderized
2 Avocados, (Haas), Sliced
3 Poblano Peppers Roasted, Skinned & Sliced
Bunch cilantro, chopped fine
12 Corn Tortillas
1.5 cups Queso fresco, crumbled
marinade for steak
1 lime, juiced
1 splash Tequila
1/2 cup Mojo marinade
Adobo seasoning
Directions
Marinate steak in marinade ingredients for up to an hour (at least 1/2 hour).
Roast peppers (on grill at high heat or on gas stove top) until skins are evenly blackened. Cool in zip top baggie for 15 minutes. Remove skin, seeds and stem.
Slice avacado, dice cilantro and crumble cheese. Set aside.
On high grill cook flank steak to desired doneness. It usually takes about 4 minutes per side. Let rest between 2 plates for 10 minutes before slicing.
Warm tortillas on grill for a couple of minutes per side, until cooked and hot.
Slice steak against the grain very thin.
Serve on tortillas
