    2 medium cooking apples (diced)

    Mix in large bowl with wooden spoon:
    1 cup sugar
    1/2 cup shortening
    l teaspoong vanilla
    2 large eggs

    Stir in until smooth (batter will be thick):
    2 cups all-purpose flour
    1 teaspoong baking powder
    1 teaspoon baking soda
    1 teaspoon ground cinnamon
    1/2 teaspoon salt

    Stir in:
    1/2 cup chopped macadamia nuts
    1/2 cup dried cranberries

    Spread batter in lightly buttered or greased pan.

    In a small bowl, mix 1 tablespoon sugar and 1/4 teaspoon ground cinnamon and sprinkle over batter.


Bake 50 to 55 minutes or until toothpick comes out clean after insertion.

Makes 1 loaf (16 slices).

    Ummm you might want to include the rest of the ingredients in the nutrition calculation. You only put apples; no wonder it says it's only 4 calories per slice. I thought that was a little strange! - 9/1/08
