Introduction

Ingredients

20 oz (1 1/4 lb) Pork Tenderloin, well trimmed and cut into 20 - 1oz medallions
1-6oz box of cornbread stuffing (prepared with water only)
10oz can of 98% FF Cream of Mushroom Soup
1 soup can of water
8oz. fresh sliced mushrooms
1 large onion, thinly sliced
salt & pepper
Directions
Heat a large non-stick skillet on med-high heat.
Season medallions with salt and pepper.
When the skillet is hot lightly spray with cooking spray and saute' medallions for approx 1-2 minutes on each side.
Add onions, mushrooms, soup & water. Bring to a boil and simmer on medium for 15 minutes.
While the pork is simmering prepare the cornbread stuffing according to package directions using WATER ONLY. (If you wish to use butter or margarine you will need to add those calories accordingly)
After the 15 minutes take the pork out and place on a platter under foil to rest.
Bring the gravy left in the pot up to a boil and reduce the liquid to thicken the gravy.
While the gravy is thickening take a 2T medium scoop and place one scoop of prepared stuffing onto each medallion.
When gravy has reduced spoon the gravy over the top of the stuffing topped medallions.
