    3 white potatoes, diced
    1/2 yellow onion, chopped
    1 tsp garlic minced
    1 med carrot
    1 c frozen corn
1 c low sodium chicken broth

    1/2 tsp salt
    1/2 tsp black pepper

Directions

Put potatoes and chicken broth into pot and cook until potatoes are tender, aprox 15 - 20 minutes.

While cooking potatoes, fry sausage until cooked through, aprox 15 min.

Remove from pan and dice into small bite size pieces.

Add onion to pan and saute a few minutes then add garlic and saute a minute more. Turn off and let sit.

Mash half of potatoes in broth to give thicker consistancy.

Then add carrots, corn, garlic onion mixture, spices and sausage to potatoes. Bring to a boil then reduce heat to a simmer. Cook until carrots are tender then add 1/2 & 1/2 and heat without boiling for a few minutes more.
