Ingredients

    Cucumber (peeled), 1 cup, pared, chopped
    Onions, raw, .33 cup, chopped
    Red Ripe Tomatoes, 1 large whole (3" dia)
    Balsamic Vinegar, 1 tbsp
    (cider vinegar is really red wine vinegar) Cider Vinegar, 1 tbsp
    1/8tsp salt
    1/8 tsp pepper

Directions

Chop all veggies into small pieces, add vinegars, salt and pepper, toss. Let sit in fridge for 10 minutes. ENJOY!
