Ingredients

    *Extra Virgin Olive Oil, 2 tbsp
    Onions, raw, 1 medium (2-1/2" dia) - diced
    2 cans beef broth (10.5 oz)
    1 lb package Seviroli Beef Tortellini
    Spinach, frozen, .5 package (10 oz) - defrosted
    Salt, .5 tsp
    Pepper, black, 1 tbsp
    Garlic, 1 clove - minced
    Nutmeg, ground, .25 tsp
    Parmesan Cheese, grated, 2 tbsp

Directions

Heat oil over med high heat
Add diced onion and garlic
Cook until the onion is soft
Add beef broth and 2 cups water
Raise heat to high and boil
Reduce heat to medium and add tortellini
Cook for 3 minutes
Add spinach, Nutmeg, Salt and Pepper.
Cook for another 4 minutes.
Ladel into soup bowls and Sprinkle with Grated Cheese.
