Ingredients

    Shelly's Zucchini Pancakes

    1 Zucchini, grated
    1/2 cup Ricotta Cheese
    1/4 cup Whole Wheat Flour (I use Arrowhead Mills Multigrain Pancake Mix)
    1/2 teaspoon Oregano
    1/4 teaspoon Onion Powder
    1 Egg, beaten
    1/4 cup Parmesan, grated
    1/2 teaspoon Kosher Salt
    a few twists of Black Pepper
    1 tablespoon Olive Oil or Butter

    Combine all ingredients but oil. Heat oil in pan. Drop dollops of zucchini mixture into pan and cook in batches. Flatten with a spatula and cook about three minutes each side till golden. Makes 8.

    Incredible!
    Goof recipe, low in fat. Did not use oregano but used parmesan cheese with red pepper. I like it only asked for one egg and the Ricotta just made them perfect, more than I was
    looking for but perfect. You can reallyy play with this recipe and use different veggies or fruit?
