Ingredients

    1 med red bell pepper, top cut off and seeded
    1/4 cp feta, crumbled
    1/4 cp cherry tomatoes, cut in half
    1/4 cp mushrooms, cut into 1/4ths
    1/4 cp cucumber, cut into small chunks
    1-2 Tbl onion, diced
    1 Tbl lite ceasar or olive oil dressing of your choice (optional)

Directions

Chop up veggies.

Coat in dressing (optional). Gently stir in feta.

Spoon into prepared red pepper.
