This easy recipe is perfect for those who are looking to cook once and have enough for days and some to freeze. This easy recipe is perfect for those who are looking to cook once and have enough for days and some to freeze.
Number of Servings: 16

Ingredients

    1.33 lbs ground turkey
    1 medium eggplant
    1 yellow squash
    1 green squash
    1 med onion,chopped
    2 table crushed garlic
    1 large green pepper
    1 cup sliced mushrooms
    1 28oz jar spaghetti sauce
    1pt light sour cream

Directions

makes approximately 8-1.5 cup serving
prepare pasta according to package( cook only to al dente)
brown ground turkey the drain, set aside
saute onions in the same pan, set aside
cut up, eggplant,pepper, green and yellow squash and steam for approximately 6 min.
drain pasta and use pot to mix all ingredients together including the cheese.
Bake until bubbly.
This amount of ingredients filled 2 casserole dishes. I freeze the other before baking.
