    1 Med Eggplant, chopped
    2 cups Zucchini, chopped
    .5 cup Onions, chopped
    1 cup Red pepper, chopped
    2 cups Stewed tomatoes
    1 clove garlic
    Salt & Pepper


heat oil over med-high heat. Add all vegetables and saute until tender. Add Garlic and cook 1-2 more minutes. Add in Stewed tomatoes and let simmer for 15 mins. Makes 6 1-cup servings
