Introduction

Very easy to prepare. Can be served warm or cold. Very easy to prepare. Can be served warm or cold.
Number of Servings: 1

Ingredients

    4 cups sliced summer squash
    1 cup sliced onions
    1/2 cup sliced green peppers
    2 TBS chicken broth
    salt and pepper to taste

Directions

Combine all ingredients and put in a microwave casserole dish. Cook 15 minutes, turning every 5 minutes and check for doneness after 10 minutes. Let set for 10 minutes and then serve.

    What a simple, tasty and healthy side dish for dinner. I added a cup full of left over mushrooms, and sprinkled with parmisian cheese, 1 ts. per serving. Yummy! - 9/8/08

    very good. I just doubled the recipe for our family and added pimentos and rotel to the mix, sprinkled bread crumbs on top and parmesan cheese. Very good and with fat free sour cream as a side, it was even - 6/8/10
