Ingredients

    1.5 cup flour
    3/4 cup ground flax seed
    3/4 cup oat bran
    1.5 cup brown sugar
    2 tsp baking soda
    1 tsp baking powder
    1 tsp salt
    1 tbsp cinnamon
    3/4 cup milk
    2 beaten eggs
    1 tsp vanilla
    1/2 cup oil
    2 cups shredded carrots
    2 cups shredded apples
    1/2 cup raisins
    1 cup pecans

Directions

Bake at 350 degrees for 15 - 20 minutes or till toothpick comes out clean.
1. Mix all dry ingredients in one large bowl.
2. In another bowl mix, milk, eggs, vanilla and oil.
3. Add to dry ingredients and mix till moist.
4. Fold in carrots, apples, raisins or nuts.
5. Filled prepared muffin cups 2/3 full or more with batter.
6. Makes 12 large muffins.
