Ingredients

    Pork, fresh, loin, top loin (chops), boneless, without fat, raw, 4 chop,
    Bread Crumbs - Italian Style, 1/4 cup
    Olive Oil, 1 tbsp
    Shallots, 4 tbsp chopped
    Chicken Broth, 1/2 cup
    Lemon Juice, 1 fl oz
    Lemon Peel, 1 tbsp
    Parsley, dried, 3 tbsp
    Pepper, black, 1 dash

Directions

1. Dredge chops in breadcrumbs, brown in med-hi skillet in oil. Remove from pan.

2. cook shallots stir in broth juice, scraping the pan to loosen browned bits.

3. Add parsley, rind and pepper simmer for 1 minute.

4. Return pork to pan, partially cover and simmer until pork is cooked through (about 30 to 45 minutes).

5. Serve with sauce.

Serving- One chop. Makes 4 servings
