Introduction
This is a very versatile recipe that I threw together in a pinch tonight to try to make something my husband AND my 15 mo old son would enjoy.You can substitute lower-fat cheese and lowfat cream of mushroom soup to reduce the calorie content. Ingredients

1 lb ground turkey
1 TBS olive oil
1 cup chicken broth
2 slices american cheese
mashed potatoes, 2 cups (I used Idahoan Baby Reds Garlic & Parmesan--delicious!)
1 cup cream of mushroom soup
frozen broccoli
frozen mixed vegetables
frozen chopped bell pepper
Directions
brown turkey in olive oil
add frozen veggies and saute (I added Italian Seasoning, garlic, salt-free poultry seasoning and pepper for flavor)
add chicken broth & bring to boil to cook veggies
add cream of mushroom soup and simmer
add sliced cheese and stir to melt through
pour mixture into greased baking dish
top with mashed potatoes
Bake at 350 for 15 min until heated through
Makes 4 large servings (1.5 cups)
I'm not sure if the sodium content on here is exactly right--it depends on the brand of product you use. Of course, it's hard to control sodium content when you use convenience items like canned foods and packaged potatoes. I'm sure this recipe can be tweaked to reduce the sodium!
