Ingredients

    2 tbsp Lime Juice
    2 to 4 drops of Hot Pepper
    2 La Tortilla Factory, Garlic & Herb Low Carb Tortilla 7 inch
    1/2 cup of Spinach, fresh
    2 slices of Pepper Jack Cheese
    1/2 of an Avocado, pureed
    1 tbsp Kraft Mayo Light Mayonnaise (Mayo),
    8 strips Yellow Bell Peppers
    1/5 Onion sliced (a few onion slices)

Directions

In a bowl mix avocado, lime juice, mayo and hot sauce. Set aside. Cut up bell pepper and onion. Wash spinach. Get tortillas and spread each one with the avocado mixture. Then put spinach, cheese, bell pepper, and onion down the center of each tortilla. Roll each up tightly and enjoy. Makes 2 servings. I like serving it with a few cucumbers and carrots.

    I left out the hot pepper, sustitituted swiss for pepper jack and used red leaf lettuce instead of spinach. I used a green chile dip that I had in the fridge and pressed a whole Avocado in to make the spread. Also, roasted red peppers instead of yellow, made this delicious! - 9/18/08

    Very Good
    This was very delicious! I think I would substitute plain yogurt for hte mayonnaise next time too. I also added a slice of tomato. Would be easy to make a few servings of the sauce and use to make lunches for the week. The avocado will keep because of the lime juice. - 9/24/08

    Very tasty, I use sharp cheese, and less peppers and anions, and instead of mayonnaise I use plain yougurt. - 9/12/08
