Introduction
I make this in a big crock pot at the beginning of the week. Being single, it takes me most of the week to eat all the servings. What's nice about this recipe is I can add low fat sour cream one day, barbeque sauce another day, put it in a low fat bread bowl, et al, to change it up and seem like I'm eating something different. Saves grocery money. Saves time. Very healthy especially if I remove all the fat before cooking, then cool the soup and skim the fat from the top again (if there is any) I make this in a big crock pot at the beginning of the week. Ingredients

6 Chicken Thighs, remove bone, skin, fat
6 Medium Potatoes, rinsed and diced
2 Large Red Bell Peppers
16 oz Low Sodium Chicken Broth and water
Salt and Pepper to taste
Directions
Dice Potatoes, Peppers and put in slow cooker
Remove fat, skin and bone from chicken thighs, place thighs in slow cooker
Pour Chicken broth (canned or made from boullion) on top, usually to cover the ingredients. Use water to bring the level up to the tips of the chicken.
Allow to cook while you are out for the day, 4 hours on HI or 6 - 8 hours on LO, depending on how soft you would like your potatoes
Get creative with this base! It's a great go to recipe when you don't have a lot of time or inclination to cook.
