    1- 12oz. nonfat evaporated milk
    1/2 c. fat free cottage cheese
    1/4 c. parmesan
    2 large eggs
    3 large egg whites
    1/2 tsp. salt
    1/4 tsp. pepper
    Plain 9" pie crust, baked and cooled


Preheat oven to 425F. Wisk the milk, cottage cheese, parmesan, eggs, egg whites, salt and pepper. Place pie plate on cookie sheet. Spread spinach over pie crust and pour in filling. Bake 15 minutes. Reduce oven temp to 350F and bake until filling is set, approx. 20 minutes. Let cool 10 minutes before serving. Makes 6 servings.
