Introduction

Number of Servings: 8

Ingredients

    1/3 cup extra virgin olive oil
    1/2 c chopped pecans
    1/2 c dried cranberries
    1/2 c balsamic vinigar
    1 cup fresh chopped tomatoes
    1 tsp Italian spices

Directions

Put 1 tbs of olive oil in skillet, add pecans. Cook until toasted and add cranberries and saute until they are soft. Add remaining ingredients cooking until to tomatoes are soft and well cooked. Serve on bed of fresh spinach. (I top with 1 tbs chopped boiled egg. This is not part of the calories listed.)
Makes about 8 2tbs servings
