My friend, Julie Chung came up with this recipe. It's an excellent substitute for traditional mashed potatoes. Quick and easy to fix, no dairy and low in calories and fat. Ingredients

2 heads of cauliflower
8 cloves of garlic
2 tbsp of olive oil
salt to taste
Directions
1. Cut up cauliflower into "small trees" including the stem. Rinse thoroughly.
2. Mince garlic and sautee in medium pan with olive oil that has been heated on low-med. Be careful not to burn the garlic, so continue to stir. Add salt and set aside while steaming cauliflower.
3. Steam ~10 minutes or until softened (fork should easily poke through)
4. Strain cauliflower
5. In a large bowl, combine sauteed garlic and cauliflower. Using a blender or a "hand mixer stick," puree until smooth. Add more salt if needed.
