Ingredients

POM Pomegranate Blueberry Juice, 8 oz
Ginger, ground, 1 tbsp
Nutmeg, ground, 1 tbsp
Cocoa, dry powder, unsweetened, 1 tbsp
9 oz. jar of Polaner Sugar Free Raspberry JamPork Chops (pork loin), roasted, 12 oz (4 3oz chops)
Directions
Makes 4 servings (one pork chop per person)
Preheat oven to 375 degrees.
While oven is warming, add juice in oven-safe pan over medium high heat. Add jelly and stir until jelly dissolves. Add spices and cocoa and stir to combine.
Add pork to sauce and place in oven to bake. Turn pork every 15 minutes, so it is evenly coated in sauce.
Check the temperature with a meat thermometer after 30 minutes. Bake until cooked through.

What an incredible blend of flavor this main dish is! The sauce is perfect to drizzle on boiled red and gold potatoes as well as nice steamed asparagus. Thank you for the tasty meal, this will be made again and again. I only used 1/3 to 1/2 the ginger and nutmeg though, I started with 1 tsp ea. - 2/11/09
