Directions
If you're going to use brown rice like I did do this first because it takes almost an hour to cook.
Prepare brown rice as directed on package
Boil 2 chicken breasts (boneless/ skinless is easiest)
Drain chicken once it is cooked and dice in about 1 in cubes
Throw a bag of mixed broc/cauliflower (or any mix veggies you have) into caserole dish
add can of cream of mushroom soup and one can milk into casserole dish with veggies.
Add can of sliced mushrooms
Shred 1 cup of cheese and add to casserole dish
once rice is done cooking add to casserole dish with other ingredients, mix well
bake covered at 375 degrees for 20-30 minutes until vegetables are cooked and soft and cheese is melted.
