This cake is a healthier version of the pineapple upside down cake I used to eat. This cake is a healthier version of the pineapple upside down cake I used to eat.
Number of Servings: 4


    half pkg carrot cake mix
    4 oz water
    2 egg whites
    1 cup fresh peach slices
    ground cinnamon
    4 Tbs I can't brlieve it's not butter
    4 Tbs brown sgar packed


using half the cake mix in the box add water and egg whites and mix with a mixer till fluffy.
Melt the I....butter in the 9 inch square pan you are baking the cake in and then add the brown sugar to cover the bottem.
Sprinkle the fresh peaches with cinnamon and put in the bottom of the prepared pan. Cover the fruit with the cake and bake at 350 for 20-25 min or till done. Makes 4-6 servings depending on the size piece you serve.
